Lieber lässt man zwischen den Rebzeilen eine Vielfalt an Gräsern wachsen, die ein natürliche Pflanzenvielfalt ergeben. Dadurch siedeln sich auch die natürlichen Feinde der Rebschädlinge an und somit auch ein "grüner" Schutz der Reben. Die Reserva ist eine Cuvée aus verschiedenen Rebsorten, die typisch für diese Region sind. Jede einzelne Rebsorte wird sortenrein 210 Tage in neuen französischen Barriques ausgebaut. Erst danach erfolgt die Assemblage - die individuelle Zusammenstellung des Reserva Blends. Für weitere 120 Tage reift der Wein danach im Barrique. Das Resultat ist ein fast schwarzroter vergorener Rebsaft, der ein intensives Bouquet von Kirsche, Pflaume und Würzaromen hat. Natürlich ergänzen nach so langer Fassreife die Toastaromen von Vanille den Duft des Gewächses. Reife Tannine und ein vollmundiger Körper geben dem Wein eine feste Struktur.
